Zupas Quinoa Salad Recipe

This healthy weight release recipe is one my grandma shared with me.  We love the restaurant chain in Utah called Zupas.  She has their cookbook and shared this delish quinoa recipe with me.  Took it to my husbands work potluck and it was a hit.  Can be served cold or hot.   Love all these quinoa recipes lately.  In the cookbook, they say this about quinoa: “Quinoa is unusual among plant foods because it is a complete protein source.  It has very high protein content, and balanced essential amino acids.  It’s a good source of fiber, magnesium, and iron.  It’s also gluten free and easy to digest.  What’s not to love?”

Directions

Makes: 8 servings
Step 1
Prepare quinoa. (Boiling quinoa is like boiling rice. 1 cup dry quinoa, 2 cups water and 1 tsp salt. Rinse the quinoa until the water runs clear. Add quinoa to boiling water with salt. Cover and reduce heat to low and let simmer for about 15 minutes, until most of the water is absorbed.)
Ingredients:
1 cup Quinoa, Dry
Step 2
Place together in a large bowl.
Ingredients:
1 can Black Beans, rinsed and drained
Tomatoes, Cherry, halved
3 Green Onions, chopped
12 Red Bell Pepper, thinly sliced or chopped
12 Yellow Bell Pepper, thinly sliced or chopped
14 cup Anaheim Pepper, chopped
13 cup Fresh Cilantro, chopped
1 Lemon, juice of 1 lemon, about 2 t
1 Avacado, sliced
Step 3
Mix in quinoa and drizzle flavored olive oil on top to taste.
Ingredients:
Olive Oil, to taste
Step 4
Add Salt and Pepper to taste. Enjoy hot or cold.
