“What’s in My Fridge?” Salad in a Blanket!

I’m into week two of having three kids, at three different schools! Let’s just say, ALL my meals have been “fast fix” ones! This was one of my favorites. It incorporates a lot of healthy fresh veggies, and you can use whatever leftover meat and beans you have on hand.

Take a tortilla and place it on your plate. I usually use whole wheat or corn, but we ran out after we ate them for dinner! SO…I had some regular ones I used for our “photo shoot!”

Now the fun part…You make a salad with your favorite Mexican toppings! We had:

Fresh tomatoes from our garden

Fresh green peppers from our garden

Fresh red peppers from our garden

Fresh banana peppers from our garden

Fresh cilantro from our garden

Lettuce

Leftover spicy lean hamburger

(Other ideas: any type of beans, cheese, zucchini, salmon, sole, spinach, etc)

Place all this “goodness” on your small tortilla. Drizzle with a little salad dressing of your choice, or just squirt some lime and add some salsa. Eat this as a “salad” at the beginning, then, fold into a taco to finish off the rest. Salad in a Blanket.

This is fast, easy, healthy and quick…So you can get BACK INTO the CAR, and continue to drive to your choice of school activities!!

What’s a fast, easy, healthy and quick meal you have in YOUR fridge?!!

Laura – this looks great and I can’t wait to try it! Thanks for the info! I just started growing banana peppers and I am really not sure what to do with them! Are they really spicy?
