This omelet recipe is a great way to use leftover taco meat.
Makes: 1 servings
Preheat oven to 350 F. In a medium bowl, whisk egg and egg white.
1 Egg White
Stir in broccoli, red bell pepper, taco meat and shredded cheddar.
1⁄4 cup Broccoli, chopped
1⁄4 cup Red Bell Pepper, diced
1⁄4 cup Taco Meat, cooked
2 tablespoons Shredded Cheddar Cheese
Mist 1 oven-safe 8-oz dish with olive oil cooking spray. Add mixture to dish and bake until set, 12 to 15 minutes.
