*Chicken Tortilla Soup


If you love cilantro, avocado, and Greek yogurt, this is the Chicken Tortilla Soup for you!



Makes: 6 servings
Step 1
Spray pan with olive oil. Over medium-high heat, cook boneless chicken with garlic and cumin. Shred chicken when cooked.
2 Boneless Chicken Breasts
14 teaspoon Cumin
12 teaspoon Garlic, minced
Step 2
Add ingredients and simmer for 20 to 30 minutes.
3 cups Water
2 cups Celery, chopped
2 cups Carrot, chopped
1 can Black Beans
1 can Stewed Tomatoes, drained
1 can Corn Kernels
1 cup Salsa
3 tablespoons Fresh Cilantro, chopped stems
1 cup Onion, chopped
4 cubes Chicken Bouillon
1 tablespoon Lemon Juice
12 teaspoon Chili Powder
Step 3
Pour serving of soup in bowl. Mix a scoop of plain Greek yogurt into each bowl and top with avocado and or tortilla chips if desired.
