Quick and Easy Dinner Recipes: Tex-Mex Skillet

15 Minute Dinner: Tex Mex Meal
During the summer time, my kids and I are outside most of the day and all I want to cook are quick and easy meals, but without sacrificing health and flavor!  My goal over the summer months is to find as many 15 minute or less meals as I can and to share them with you to simplify all of our lives so we can enjoy outside time with the kiddos.

Over the weekend, I was perusing about a years worth of Clean Eating magazines and found a Southwestern Turkey Meatball recipe and figured, why add the carbs and time it takes to make meatballs – let’s just brown the meat.  I personally use organic, grass fed local beef, but you can feel free to use turkey.  This meal was super fast and tasted great to the kids and I.  My husband needed to add a little more heat and did so by throwing in some medium salsa and some green chilies into his bowl.  Everyone customized their toppings bowl with veggies we keep in the fridge for snacking and optional queso fresco. I ate mine without tortilla chips to keep it low glycemic, but the rest of the fam opted for chips.  It was delicious and I’ll be making it frequently throughout the summer.

Directions

Makes: 4 servings
Step 1
Heat skillet to medium high and brown ground beef.
Ingredients:
1 pound Extra-Lean Ground Beef, or ground turkey
Step 2
Add Step 2 ingredients to skillet and simmer until frozen corn warmed through.
Ingredients:
1 cup Frozen Corn
15 ounces Canned Black Beans, drained and rinsed well
2 cups Vine-Ripened Tomato, diced
12 cup Beef Broth
2 drops DoTERRA Lime Essential Oil, or 1 tbsp fresh lime juice
2 drops DoTERRA Cilantro Essential Oil, or 1/4 cup chopped fresh cilantro
2 drops DoTERRA Black Pepper Essential Oil, or 1/4 tsp fresh ground black pepper
Step 3
Serve with desired toppings.
Ingredients:
Black Olives, sliced, optional
Avocado, diced, optional
Tortilla Chips, optional
Queso Fresco
