
Yesterday was National Pumpkin Day, so in honor of that, I created a homemade granola bar recipe. This delicious Pumpkin Power Bar recipe to be used in your weight loss menu plans. It’s the perfect tasty Fall treat to enjoy after a workout or as a quick afternoon snack or even a guilt free dessert!
Pumpkin Power Bars
Preheat oven to 350 and spray a 9 X 13 pan with Pam spray. Combine dry ingredients in one bowl. Combine wet ingredients in another bowl. Mix all together and press into pan. Bake for 25-30 minutes. Enjoy!
3 cups old fashioned oats
1/2 cup coconut
1/2 cup sunflower seeds
1/3 cup ground flaxseed
1/2 cup slivered almonds
1/2 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup cocoa nibs
1/3 cup brown sugar
1 cup pumpkin puree
1/4 cup applesauce
1/2 cup honey
2 teaspoons vanilla extract

Yum! I’ve got everything except the cocoa nibs. I’ll make it anyway!
You can sub choco chips for the nibs. I’m going to try this again Friday using peanut butter instead of applesauce.
These sound good. Making your own granola bars is always so great. I love to make granola bars too, but I’ve never seen cocoa nibs before!
