Pumpkin Power Bars

Yesterday was National Pumpkin Day, so in honor of that, I created a homemade granola bar recipe.  This delicious Pumpkin Power Bar recipe to be used in your weight loss menu plans.  It’s the perfect tasty Fall treat to enjoy after a workout or as a quick afternoon snack or even a guilt free dessert!

Pumpkin Power Bars

Preheat oven to 350 and spray a 9 X 13 pan with Pam spray.  Combine dry ingredients in one bowl.  Combine wet ingredients in another bowl.  Mix all together and press into pan.  Bake for 25-30 minutes.  Enjoy!

3 cups old fashioned oats
1/2 cup coconut
1/2 cup sunflower seeds
1/3 cup ground flaxseed
1/2 cup slivered almonds
1/2 teaspoon pumpkin pie spice
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup cocoa nibs

 

1/3 cup brown sugar
1 cup pumpkin puree
1/4 cup applesauce
1/2 cup honey
2 teaspoons vanilla extract

  2. These sound good. Making your own granola bars is always so great. I love to make granola bars too, but I’ve never seen cocoa nibs before!

    uh YUM! I made these today at my mom’s house. Between my kids, my mom and my nieces and nephews, they didn’t last the day! They were a hit and all the kids loved them just as much as I did. Definitely an awesome go to recipe. Thanks
