If you’re using Pinterest to simplify your life, you’re probably as in love with it as I am. I’m pinning photos of recipes I want to try on my Food board. It’s probably time for me to create MORE food boards, like veggies, fruits, desserts to makeover, breakfast, lunch, dinner. I have learned that it’s not a good idea to surf Pinterest when you’re getting hungry. There are always SO many treats pinned and hungry and dessert staring you in the face isn’t a good combination. It may just give you a craving for baking.
In the last few weeks, I’ve been working to actually MAKE the recipes I’m pinning and I’m finding new favorites as I do.
One new quick go-to dinner is this Cheesy Chicken and Rice Bake which you know I made over. I replaced the rice with barley and instead of 4 cups of cooked rice, I started with 1 ½ cups uncooked barley and just used what that made. 4 cups of grain is a little too carb heaving for my liking. I did add a chicken bouillon cube to the rice cooker. One of my neighbors just gave me a brilliant idea though for when I’m cooking chicken and barley. When boiling the chicken, right before it’s almost done, throw the barley into the same water (hello?! Homemade chicken broth!). Just make sure you have enough water in the pot. One less dish to clean! I also cooked my cilantro in the bake rather than using on top for garnish. My husband isn’t really a barley fan, but this recipe was good enough, he won’t mind if I make it again!
We also fell in love with these Roasted Tomatoes and definitely recommend adding the basil pesto!
I am currently working to makeover these Oatmeal Pumpkin Cookies. You guys know how much I LOVE pumpkin!

I can’t wait to see what you come up with as a healthy makeover to the pumpkin oatmeal cookies. I am currently in love with anything pumpkin too! This weekend I made pumpkin spice cup cakes and pumpkin granola bars from the Meal Makeover Mom’s. They were both excellent and healthier treats! I just found you through kitchenmonki and am excited to follow your blog now!
Oh yes, please hurry with this recipe! I just looked at the website it came from and I have been drooling, but am waiting for the healthy version. I think I have figured out what most substitutions should be, but can’t figure out how to sub the white flour for something healthier. Any progress Nisha?
