Low Glycemic Tomato Cucumber Feta Lunch

There’s no better way to make a crummy day better than with a delicious low glycemic tomato cucumber feta lunch.  My daughter was up from 4-5 am vomiting and has continued to feel crummy through the day and Landon is also under the weather.  They’ve both been so whiny and needy all day and I haven’t had much me time.  For lunch, I quickly threw together tomato cucumber and feta.  Oh, it’s so heavenly!!  If you haven’t ever tried feta, you are missing out.  I used this Armenian Cucumber that we got from GG (my kids great grandma on my hubby’s side).  Armenian cucumbers are snake-like and also called yard-long cucumber, snake cucumber, snake melon, and uri.  They are actually melons, but taste almost just like a cucumber.


Feta cheese is so incredibly tasty. It gives salads the zing they need. What is your favorite recipe to add feta cheese to?

    I have this recipe for Greek Burgers with onions and feta cheese. Burgers are flavored with a greek seasoning then grilled. You saute onions in olive oil and then add feta cheese. Serve on a whole wheat pita with cucumbers, plain/Greek yogurt and sliced tomatoes. Except I skip the tomatoes ’cause I just can’t eat them! So delicious!
