Healthy Salad, Sophisticated Picnic

 Summertime at our house means lots of park play dates and picnics with friends. As a mom, do you pack a quick PBJ for yourself as well, or do you go a little more sophisticated? I made this Grape and Quinoa Salad for a park play date last week and it was so delicious and light. You could add cooked chicken breast to it for a one-dish meal.

Directions

Makes: 6 servings
Step 1
Mix quinoa, grapes, hazelnuts and green onion in a medium bowl; set aside.
Ingredients:
3 cups Quinoa, cooled
1 12 cups red and green seedless grapes, cut into quarters
12 cup dry-roasted hazelnut, coarsely chopped
14 cup Green Onion, chopped
Step 2
In a small bowl, whisk olive oil, lemon juice, fructose, and salt. Pour dressing over quinoa mixture and stir to combine.
Ingredients:
14 cup Extra Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
12 tablespoon granulated fructose
14 Salt
Step 3
Cover and refrigerate for 30 minutes before serving. Makes 6 servings.

This is such a yummy salad! If you don't have hazelnuts on hand, you can substitute slivered almonds. Add grilled chicken cut in cubes to make this a one-dish meal.

    I tried quinoa for the first time a couple nights ago. I wasn’t sure what to add to it, so we had in plain along side our grilled salmon. It was good, but definitely needed some other flavors. I’ll have to try this recipe! Thanks :)

    Silly question, but I don’t have much experience with quinoa (first and last time I cooked it it was like watery mush). How much quinoa do you cook to get 3 C and how long do you cook it? I am excited to try this recipe!
