Healthy Salad Recipes: BLT Salad

There’s nothing worse than working hard to feed your family healthy, trying a new healthy low glycemic recipe, and failing.  There’s also nothing like knocking one out of the park.  When I created this healthy salad the other night, I was like, “Oh yeah!  Money shot!”  The whole family LOVED IT!  Not one complaint from anyone.  By now, you know I don’t like boring salads.  I like creating salads with a specific purpose in mind – rather than just throwing random things together.  This week, I created the BLT Salad.  I got my inspiration at Costco after I sampled their frozen green garbanzo beans.  I gave some to my 11 month old and he was loving them.  With 15 grams of protein and 12 grams of fiber in one cup, it was a no brainer for me to pick this up.  This salad would be great with olive oil/vinegar dressing or homemade ranch.  We used ranch.  This is definitely going to become a regular meal at our house.  It’s a complete healthy salad meal that will leave you full and satisfied.  What’s your family’s favorite salad recipe?  Do you have a recipe you refer to as your “money shot”?
