Healthy Fathers Day Brunch

I was so excited to try this healthy breakfast recipe I found on KitchenMonki for Mini Frittatas with Ham and Cheese. When it comes to breakfast, my husband is all for healthy. He’s not really into high glycemic baked goodness. He’ll take eggs over anything. We make omelets quite often, so I was excited to try something new and different using eggs.  I didn’t have the mini muffin tins, so I added a few eggs to fill them all.  Also, it says 8 servings, but there were just three of us eating and we ate them all, along with red and green grapes and honeydew.

What did you make for Fathers Day brunch or are you making something special for dinner?  We’re heading to my parents for dinner, so I’m off the hook for dinnertime!
