This week’s Bountiful Baskets Food Co-op contribution of $15 provided us with plenty of low glycemic fruits and vegetables for my healthy family menu plan. It included fuji apples, green bell peppers, blackberries, broccoli crowns, cucumbers, butter lettuce, yellow onions, naval oranges, D’anjou Pears, persimmons, pineapple, tomatoes, and radishes.
Of course I first turned to Pinterest for menu plan ideas. I would much rather find my recipes by searching photos than words. So, for your viewing pleasure, I’ve included photos for each recipe idea.
Saturday Dinner: Tonight, I’m experimenting with a broccoli/cheese/quinoa casserole. I don’t want to post the recipe in case it’s a bust, but if it’s a winner, it will be up later tonight or tomorrow! Broccoli Cheddar Soup or Sausage Broccoli Bake would also make great choices.


Sunday: Teriyaki Pineapple Turkey Burgers (wrap in lettuce instead of bun if you’re working on releasing weight with low glycemic eating). For sides to the burgers, try Roasted Persimmons! I’m also going to experiment with squash chips in the dehydrator.


Meatless Monday: Western Broccoli (uses broccoli and tomato). For more protein, make your own dressing with greek yogurt, milk, and homemade ranch mix! 

Tuesday: Stuffed Green Bell Peppers (uses onion and green bells)
Wednesday: Creamy Cucumber Salad (uses cucumbers and radishes) & Lemon & Dill Chicken


Thursday: Autumn Chopped Salad (with pears, apples, butter lettuce, can add leftover shredded lemon chicken)
