Bountiful Baskets Roundup & Menu Plan

It's been quite a while since I participated in Bountiful Baskets Food Coop, so I was thrilled this morning when I saw the contents of our baskets!  Weren't those tiny spaghetti squash the cutest?!  I'm glad we got two and not just one so we can make a meal out of it!!

In addition to the spaghetti squash, the vegetables we received included 2 heads of Romaine lettuce, one carton of mushrooms, 2 cucumbers, a large bag + a couple extras of potatoes. The fruits we received included lots of plums and apricots, a pineapple, personal sized watermelon, bananas, and seedless green grapes.

This week I'm starting a new workout plan and I know that means my body will be demanding more calories until I get used to it, so I actually planned out a pretty detailed menu plan.  I've noticed when I don't eat enough throughout the day, I really struggle to make smart choices at night – my body wants anything and everything!

My son just woke up.  I think this is the latest he's slept in his whole life!  We played really hard this week and today, we're cleaning house!!  Date night with my hubby tonight (hopefully buying me new running shoes and cheering on his soccer team to victory at their indoor game).  What is your family up to this weekend?  Any special plans for Father's Day?  We'll be taking it easy on Sunday – just what the Father of our home would like.  Happy Father's Day to all the dads out there!!
