Today in our Bountiful Basket haul, we brought home bananas, green bell peppers, Brussels sprouts, kiwi, lemon, Romaine lettuce, minneola, yellow onion, pears, Italian squash, yellow squash, Roma tomatoes. Below is how I’ll be putting the veggies all to use along with some protein options and barley. My neighbor made some killer barley the other day that my kids inhaled! I need to get the recipe from her and post it! I’ll be making a big batch to eat throughout the week. The fruit will all get eaten throughout the day as snacks and with meals. We typically don’t do anything too fancy with our fruit – it’s perfect just on it’s own!
You can never go wrong with an Autumn Chopped Salad. It’s one of my favs!
I will definitely be making Kayln’s Stuffed Green Bell Peppers again. My kids don’t eat the bells, but they LOVE the stuffing! Lasts time I used quinoa instead of the brown rice. It was delicious!
I have to be honest, I’ve never made a Brussels sprouts recipe I really liked, but this one gives me hope!!
I also have some squash I picked up at Sunflower Farmers Market last week, so I listed a few different squash options to choose from. I’m leaning toward the Parmesan Bake, but the ribbons look beautiful and the others look mighty tasty as well.

I made these on Sunday and my kids fought over who got the last of them. Even hubs liked them and he doesn’t normally eat green. I served them with this:

Which is an awesome way to use romaine lettuce from your baskets and NOT have to have ANOTHER green salad. I had no idea you could sautee and wilt Romaine lettuce like spinach or other greens, but the result was very delightful. My family ate up every last bite of this dinner (an entire plateful of green!) and was sad to see it go. Highly recommend both recipes.
