Low Glycemic Menu Plan & Sunrise Pizza Recipe

I love it when the weather starts to warm up and our Bountiful Baskets get more abundant with fresh low glycemic fruits and vegetables! This week was a fabulous basket filled with pears, kiwi, apples, mango, bananas, broccoli, cauliflower, cucumbers, butter leaf lettuce, and red potatoes.  I'm hoping the mangoes and pears ripen up quickly so we can use them in delicious salad!  This week, we're doing soups and salads and making extra so we can have leftovers for lunch.  I have a very full week, so it will be nice to have lunch taken care of.  The other thing I love about soups is that you really can make them at ANY time during the day!  I'm hoping the lentil soup is a hit because I have TONS of lentils in my food storage and need more recipes.  The only recipe i use lentils in is the Lentil Taco Salad recipe.

Thursday
Smoothies Leftovers fresh fruit medley, string cheese Lentil Soup (As suggested by FB follower, Jolyn!-Thanks Jolyn!)
Friday
Sunrise Pizzas, fresh fruit medley Leftovers kiwi, 1/2 c. Greek yogurt Mango & Black Bean Salad

Directions

Makes: 1 servings
Step 1
Preheat oven to 300. Form uncooked MultiGran Bread dough into mini-pizza sizes (flatten dough pretty thinly). Sprinkle cheese onto bread. Add ham slices, eggs (scrambled, or sunny side up); not completely cooked, and more cheese. Cook pizzas in oven for about 20 minutes.
Ingredients:
Multigrain Bread, look for the multigrain bread recipe on kitchen monki
Egg
Shredded Cheddar Cheese
Deli Sliced Ham

    I have tons of lentils recipes if you are interested. My husband was born and raised in Nepal and he ate lentils everyday. So we LOVE lentils in our house.
