I don’t mind waking up on Saturday mornings to go pick up my family’s produce for the week from Bountiful Baskets! I’m so grateful for the volunteers and Sally and Tanya for making it happen. Not to mention, they pick the tastiest produce ever. There’s nothing worse than buying nasty grapes from the store. Our grapes from Bountiful Baskets get inhaled as quick as you can imagine. This week, we came home with nectarines, grapes, bananas, plums, canary melon, strawberries, yams, lettuce, celery, tomatoes, cabbage, and green pepper. In a couple days, when all the fruit is ripe, I’m going to cut some up for some fruit salad (just plain fruit) to easily add to steel-cut oats and for snacks. Here are my dinner plans for the week:
Monday Roast with carrots from our garden, barley
Tuesday Red bean, cabbage, feta salad topped with leftover roast (Recipe coming Tues!)
Wednesday Chicken Tortilla Soup
Thursday Stir-Fried Chicken in Lettuce Cups (I’m using the romaine lettuce), Tomato Cucumber Feta
Friday Grilled Lemon Chicken, Grilled Cabbage, Fruit Salad (If you haven’t had grilled cabbage, you are missing out. Brush olive oil and garlic on it and enjoy.)
