Bountiful Baskets Roundup and Menu Plan

Today in our Bountiful Basket haul, we brought home bananas, green bell peppers, Brussels sprouts, kiwi, lemon, Romaine lettuce, minneola, yellow onion, pears, Italian squash, yellow squash, Roma tomatoes.  Below is how I’ll be putting the veggies all to use along with some protein options and barley.  My neighbor made some killer barley the other day that my kids inhaled!  I need to get the recipe from her and post it!  I’ll be making a big batch to eat throughout the week.  The fruit will all get eaten throughout the day as snacks and with meals.  We typically don’t do anything too fancy with our fruit – it’s perfect just on it’s own!

Medicine Cabinet Makeover Class

Over the last two months, my family has saved HUNDREDS of dollars in medical care thanks to essential oils.   Let me break it down for you with just one example:  In just the last two weeks, both of my kids got pink eye.  Before I learned the Medicine Cabinet Makeover class content, I would have taken the time to make an appointment at the doctor – two separate appointments as they didn’t get it at the same time.  Then, I would have paid a $25 copay per kid, which would have ended up being around $200 per kid when I got the final bill because we have a $500 per person deductible ($1500 total for our family). Not to mention the time and money it would have taken me to get to the store for a prescription eye drop that would have been a nightmare to get in their eyes!

Instead, I went right to my essential oils and put melaleuca and lavender oil around their eyes (on the eye brow area and cheek bone underneath).  I also put OnGuard and the melaleuca and lavender oils on their second and third toes (the areas of the feet connected to the eyes).  For both kids, I only had to do this every few hours for two days and they were completely cleared up!  In total, it cost me a few dollars in essential oils.  I was doing the same on my own feet a couple times, just to make sure I didn’t get it (and I didn’t!).


What I love about the image above is the fact that doTERRA CPTG Essential Oils don’t have an expiration date.  Any time we’ve bought over the counter medicines on the left of the photo, we’ve used them once and then they sit on the shelf for years, only to be thrown out.  Such a waste of money!  Essential oils have so many uses.  Just lavender alone can be used with eye infections, any skin issue, soothing irritable babies, relaxation for bedtime, cleaning, acne, arthritic pain, asthma, bronchitis, burns, colds and flu, cuts and wounds, depression, dermatitis, diarrhea, earache, headaches, herpes, hypertension, indigestion, insect bites, insomnia, migraines, muscle pain, nausea, psoriasis, skin disorders, sore throat, stomach ache, stress, and throat infections.

Healthier Tuscan Multigrain Grilled Cheese & Sprouts Recipe

Who says you can’t eat grilled cheese while working on losing weight?!  NOT ME!  Now that we have a new amazing homemade multigrain bread recipe and we know how to make our own sprouts – you have a recipe for DIVINE mighty tasty Healthier Grilled Cheese & Sprouts!

Directions

Makes: 1 servings
Step 1
Cut 1/2 inch slices of homemade multigrain bread (recipe at healthymomskitchen.com). Toast slices in toaster til lightly golden brown.
Ingredients:
2 slices Homemade Multigrain Bread, see healthymomskitchen recipe on this site
Step 2
While bread is toasting. Slice 1 small roma tomato thinly. Slice 1 small avocado thinly. Measure 2 Tbsp sprouts.
Ingredients:
2 tablespoons Sprouts
1 small Avocado, thinly sliced
1 small Roma Tomato, thinly sliced
Step 3
Spread 1/2 teaspoon mayo on each slice of bread. Spread 1/2 teaspoon pesto on each slice of bread. Add Colby slice on one piece of bread, trim edges to fit perfectly on bread. Add Medium Cheddar and Monterrey Jack slices on other piece of bread, again trimming edges to fit perfectly on bread. Lay bread slices on oven safe cookie sheet and broil on high for approximately 2 minutes. Do not preheat oven – turn broil on once bread and cheese is in the oven. Watch carefully.
Ingredients:
1 teaspoon Smart Balance Mayo
1 teaspoon Basil Pesto
1 slice Menterey Jack Cheese
1 slice Colby Cheese
1 slice Medium Cheddar Cheese
Step 4
Take bread out of oven and top one piece of bread with tomato, sprouts, and avocado. Cover with other piece of bread and enjoy!

Mango Madness

Around our house, we {LOVE} mangos!!!  We are sharing the healthy update to a family favorite (mango lassi) as well as a new found tasty meal: BBQ Mango Bacon Pizza (on a cauliflower crust).

Any time we get to eat at our favorite Indian restaurant in Provo, UT, The Bombay House, we jump at it.  Sadly, we live out of state and so it is maybe a once-a-year-occasion.  A staple with any of the tasty meals there is a Mango Lassi.  They are so stinking good.  This is a re-make of the classic using greek yogurt.  Bring a little of the Bombay House home to your house.

Mango Lassi (popular traditional Indian yogurt based drink) now even better for you by using greek yogurt. Delish!

Makes: 4 servings
Step 1
Place all ingredients in a blender and blend until smooth. We think it is sweet enough with 1 tsp Stevia, add more if it isn't sweet enough for you.
Ingredients:
4 Ataulfo Mangos, ataulfo mangos are smaller and sweeter, you could use 2 regular sized-mangos.
34 cup Plain Greek Yogurt
1 cup Milk
1 teaspoon Liquid Stevia


The second yummy recipe to share with you is BBQ Mango Bacon Pizza.  Last year we discovered this awesome combination for a pizza topping.  In our efforts to eat low-glycemic, I stumbled upon a pizza crust made from cauliflower.  It is awesome!  Find that recipe here.  They have great instructions as well as additional recipes using cauliflower such as Fried Rice, Garlic Breadsticks, and Whipped Cauliflower “Potatoes”.  I look at cauliflower in a different light now.  It is such a cool veggie.   After you make your crust and bake it, you add these toppings and the pizza comes together in under 5 minutes!  Eating healthy without sacrificing taste, that’s what it is all about.

Rating:

The big secret is the crust, made low-glycemic from cauliflower. You can eat Pizza while trying to release weight! Trust me on the flavor combinations. They compliment each other indescribably well.

Step 1

Ingredients:
1 Cauliflower Crust
Step 2
Top crust with BBQ sauce, then mango, bacon bits, and lastly mozzarella cheese. Place in oven until cheese is melted, about 5 minutes.
Ingredients:
2 tablespoons BBQ Sauce
3 tablespoons 100% Real Bacon Bits, love the costco brand
1 Mango, diced
13 cup Shredded Mozzarella Cheese

Tilapia Parmesan

This recipe turned out WAY better than I could have hoped.  It was quick and delicious.  My kids love fish, but they really liked this recipe.  We ate it all and wished there was more!

Directions

Makes: 4 servings
Step 1
Mix the ingredients well in a small bowl.
Ingredients:
2 tablespoons Butter, softened
1 12 tablespoons Mayonaise
14 cup Parmesan Cheese
1 tablespoon Lemon Juice
Step 2
Add in seasonings to your liking.
Ingredients:
1 teaspoon Dried Parsley
38 teaspoon Black Pepper
2 teaspoons Garlic Salt
Step 3
Arrange fillets in a single layer on a tinfoil lined cookie sheet. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
Ingredients:
6 small Tilapia Fillet

A Quick Guide To The 7 Steps to Emotional Mastery

In helping people achieve sustained fitness and weight loss, we have found that unaddressed emotional states can present an enormous barrier.  When emotions are not confronted, managed, and addressed, they can lead to unhealthy coping strategies rooted in avoidance such as emotional or stress eating, over eating, excessive food restriction, or other destructive behavior.  The following Seven Steps provide a tool for how to manage, and ultimately liberate ourselves from, unwanted emotional states.

1.   Identify The Feeling – This first step is the foundation of emotional intelligence.  Many times we become stuck in our emotions.  The way out is to start with identification of what we are feeling.

2.   Face The Feeling – In this step we access the power of choice in deciding to face our emotions head on.  This may seem overwhelming. Yet, the fear of facing emotions is usually more daunting than the actual experience of directly confronting emotions.  So, gather your courage, take heart, and face those feelings!

3.   Healthy Expression – Finding healthy forms of expression is key.  Becoming appropriately assertive, setting healthy boundaries, and talking through feelings are just a few examples of healthy expression.  Journaling and the arts (poetry, creative writing, singing, painting, playing an instrument) can also be extremely helpful.  Find what works for you.

4.   Learn From It –  This is the crux of Emotional Mastery. With uncomfortable emotions such as fear and sadness, we tend to hold these feelings at bay. We often believe that if we truly examine our difficult feelings, we will be overwhelmed. The opposite is usually the case.  Try taking the time to learn from unwanted and uncomfortable feelings.  Some of our greatest personal lessons are waiting to be discovered here!

5.   Take Action – Learning is useless if we do not choose to apply it.  Take the lessons you have learned in Step 4, develop a plan, and take action to follow through.  This is where you have the opportunity to take concrete steps towards the life you want.

6.   Let Go – Letting go of unwanted toxic emotions is a decision.  We have the ability to decide what we will do with our feelings. Once you have thoroughly worked through the first 5 Steps, you are now ready to take the leap and let go.  Once you make the decision, you may experience instantaneous relief, or it may take repetition of the previous steps to feel the long term effects of liberation.  Keep working these steps and it will pay off!

7.   Pay it Forward —  Paying it forward is the final crucial step to Emotional Mastery.  Here we have the opportunity to deepen our own understanding and healing by sharing what we have learned.  Reaching out also supports shifting our focus to helping others, which is a great way to celebrate the emotional release that comes with Emotional Mastery.

Wellness Wednesday: Grocery Cart Sanitizer

It seems like cold and flu season has become strep throat and flu season around here.  Just as soon as I began thinking we were done with it and eased up on the OnGuard on my kids, my daughter caught something.  BOO :(

Back to focusing on sanitization!  Here is a simple Grocery Cart Sanitizer Recipe.

In a 1 oz spray bottle, combine purified water and 5 drops OnGuard.

You can find the smaller 1 oz spray bottles for under a dollar each here.  I much prefer carrying a bottle of this in my purse with a few paper towels folded up all in a ziplock so that I have it available everywhere we go – restaurants, picnic tables at the park, grocery store carts, etc.

Healthy Delicious Lunch: Spinach Wrap
