I just realized I hadn’t published this delicious Banana Oat Bran Bread recipe yet! How cruel of me! I bought bananas for 18 cents a pound last week, so you better believe I bought a ton and I’ll be enjoying this bread as well as my Blueberry Banana Muffins. The muffin recipe is great for a weight loss breakfast recipe when paired with fresh fruit and a glass of skim milk, but this Banana Oat Bran recipe is definitely a wholesome dessert recipe!
To lower the glycemic index of this recipe, leave some of your oats in the oat bran whole. Your body will have to work a little harder to break them down. The lemon juice also helps to lower the glycemic index.
